I love making my own tomato sauce. You make it the way you want it to taste, you know what’s in it and it’s easy to make! Use this as a stepping stone to make your own, you can add whatever you want to it: green peppers, jalapenos, red chili flake, celery, carrots… the ideas are endless!
Make extra sauce, freeze in freezer bags or containers (after the sauce has completely cooled) and use when need a great tomato sauce in a recipe (lasagna, mostaccioli, eggplant Parmesan are just a few ideas)
Homemade Tomato Sauce
- 2 Tbsp olive oil
- 2 medium onions or 1 large onion, chopped
- 2 cloves of garlic, minced (or 2 Tbsp jarred garlic)
- 3 lbs. tomatoes, peeled and seeded (not sure how to peel and seed tomatoes? check this post out!)
- 2 c chicken stock (I use homemade, but can use boxed)
- 3 tsp dried basil
- 3 tsp dried oregano
- 1 tsp mustard powder
- Salt and pepper to taste
In a large saucepan, heat olive oil over medium heat. Add onions and saute until onions become translucent, about 10 minutes. Add garlic to saucepan, cook 4-5 minutes. Stir in tomatoes, chicken stock, basil, oregano and mustard powder, turn heat down to low. Simmer for 1 hour partly covered, stirring 2-3 times. Taste and season with salt and pepper as needed. Makes 4-5 cups.
* If you want a smoother sauce, use an immersion blender or a regular blender to make sauce the consistence you are looking for
